Michele's Roasted Maple-Glazed Parsnips

  1. 4 pounds of parsnips
  2. Olive oil
  3. Coconut oil or ghee (or grass fed butter)
  4. Maple syrup
  1. Cut parsnips into little sticks.
  2. Drizzle with olive oil and coconut oil or ghee (or grass fed butter) and a generous amount of maple syrup.
  3. Season generously with good salt and freshly ground pepper.
  4. Bake at 400 until golden and crunchy at the edges (about 30 minutes depending on the size of the parsnips).

  2. 4 pounds of parsnips fed about 12 people.
